Mediterranean Herb Chicken with Creamy Feta & Spinach

Golden, herb-crusted chicken cooked in a creamy feta sauce with spinach, cherry tomatoes and fresh lemon.

The Volcanos Mediterranean Herb Rub brings the herbs and seasoning together in one step, making this an easy Mediterranean-style dinner that still feels special enough to serve when friends or family are over.

Ingredients:

  • 4 boneless halal chicken breasts
  • 2 tbsp Volcanos Mediterranean Herb Rub
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, finely chopped
  • 1 small brown onion, finely diced
  • 250g cherry tomatoes, halved
  • 2 cups baby spinach
  • 1 cup thickened cream
  • 150g feta cheese, crumbled
  • ½ cup halal chicken stock
  • Juice of ½ lemon
  • 1 tsp lemon zest
  • Fresh parsley, to finish

Instructions:

1. Season the Chicken
Pat the chicken dry and coat both sides generously with the Volcanos Mediterranean Herb Rub.
2. Sear Until Golden
Heat 2 tablespoons of olive oil in a large pan over medium-high heat. Add the chicken and cook for 4–5 minutes on each side until golden. Remove from the pan and set aside.
3. Sauté the Aromatics
Add the remaining olive oil and onion to the same pan. Cook for 2–3 minutes until softened, then add the garlic and cherry tomatoes. Cook until the tomatoes begin to soften and blister.
4. Create the Creamy Sauce
Pour in the chicken stock and stir through the cream. Reduce the heat and gently simmer for 2–3 minutes.
5. Add the Feta & Spinach
Add the feta and stir until it begins to melt into the sauce. Add the spinach and cook until just wilted.
6. Bring It All Together
Return the chicken to the pan and spoon the sauce over the top. Simmer gently for another 5–7 minutes, or until the chicken is cooked through.
7. Finish with Lemon & Herbs
Finish with fresh lemon juice, lemon zest and parsley before serving.

To Serve
Pair with lemon herb rice, roasted potatoes, couscous or warm flatbread to soak up the creamy feta sauce.
